I'm happiest when I meal prep a salad or breakfast that doesn't require cooking, especially during my weekends when I would rather spend the time relaxing before another busy work week. That's why overnight oats tend to be one of my go-to meal prep breakfasts.

When I first threw together this peanut butter overnight oats recipe, I was shocked at how easy the whole thing is. Below, I'll show you my easy step-by-step guide to making overnight oats right at home, with absolutely no cooking necessary.

Easy Peanut Butter Overnight Oats Recipe

Makes 1 serving

Ingredients

1/2 cup rolled cut oats
1/2 cup milk (I like to make these with almond milk)
1 tablespoon peanut butter
1 teaspoon maple syrup
1 teaspoon chia seeds, optional
Mason jar with lid

How to Make It

Add the dry ingredients

I find it's easier to mix everything together by pouring the dry ingredients into the Mason jar first. This would be oats and, if you want, chia seeds. Because chia seeds usually sit on the pricier side, I made them optional in this recipe, but I thoroughly enjoy having them in my oats, especially because they're full of fiber.

I like to pour in the milk first, followed by peanut butter and maple syrup. I do this to make sure I'm not splashing milk all over myself when pouring it in. For some reason, I'm always getting some kind of food on me while I'm cooking…even a simple no-cook recipe such as this.

In order for the oats to become that softer oatmeal texture, they need to be fully submerged into the milk mixture. Using a spoon, push down all of the oats on the top and the sides to make sure everything is in the liquid.

Cover and place in the fridge overnight

Oats can last a few days in the fridge, but I like prepping my oats the night before I consume them. I like a heartier oatmeal, so I don't want them to sit too long and get too mushy.

Add desired fruit toppings in the morning

This is where you can get creative! This peanut butter overnight oats recipe is versatile, so add in any fruit you love to enjoy with peanut butter. I tend to lean toward fresh berries, but you could also add in apples, bananas, or even fresh mango!

My favorite part about this recipe? Once that lid is back on the jar, you can throw it in your bag and take it with you to work. I love to enjoy my overnight oats with a cup of coffee at my desk in the morning as I sift through my emails. It makes eating healthier (and cheaper) breakfasts so much easier on busy weekday mornings!

Directions

  1. Add in the dry ingredients—oats and chia seeds (if desired)—to the Mason jar first.
  2. Pour in the milk, then add in the peanut butter and maple syrup.
  3. Mix the ingredients together until the peanut butter has been evenly added to the oat mixture. Make sure all of the oats are submerged in the milk.
  4. Seal the lid, and place the oats in the refrigerator.
  5. The next morning, sprinkle in desired fruit toppers. Enjoy!

Overnight oats can last a few days in the fridge. However, keep in mind that the longer the oats sit in the milk, the mushier they will get.
