Ingredients
2 Tbsp olive oil
1 lb small red potatoes, cut into thin slices
1 1/2 cups sliced cremini mushrooms
1/2 cup chopped fresh banana peppers
1/2 cup chopped onions
1 tsp Italian seasoning
8 oz precooked Italian-style chicken sausage, quartered lengthwise and cut into 1/4-inch slices
2 cups thinly sliced kale
1/4 cup grated Asiago cheese
Nonstick cooking spray
4 eggs
Salt and black pepper to taste
How to Make It
- In a large skillet, heat oil over medium heat. Add potatoes; cover and cook for 10 minutes, stirring once, until potatoes are nearly tender.
- Add mushrooms, banana peppers, onion, and Italian seasoning; cook 3 minutes. Add sausage and kale; cook for 3 to 5 minutes, or until kale has wilted and all vegetables are tender. Sprinkle with cheese.
- Meanwhile, spray a nonstick skillet with cooking spray. Heat over medium heat. Break eggs into skillet. Reduce heat to low; cook eggs for 3 to 4 minutes, or until whites are completely set and yolks start to thicken.
- Serve fried eggs over hash. Season with salt and pepper.
